This month’s Vegetable Sushi Nori Rolls recipe is brought to you by our friends in Stable Diet and is a perfect dish coming into the warmer months.

Ingredients
Clearspring Sushi Rice
Clearspring Sushi Nori Roll
Clearspring Ume Shisho Seasoning
Clearspring Japanese Rice Mirin
Avocado
Cucumber
Peppers
Carrot Strips
Tomatoes
Aubergine

Tempura Batter
50g Cornflour
50g Plain Flour
50ml Sparkling Water (to make light consistency batter)

Method
Cook the Rice (as directed) with Rice Mirin and Ume Shisho Seasoning as directed
Prepare Vegetables (except aubergine) into strips
Place cooled rice on Nori Roll
Assemble vegetable strips on top
Roll using Bamboo Mat or similar

Allow to rest before portioning or dive right in!

To Garnish
Pickled Ginger
Clearspring Wasabi Powder mixed with water to blend
Soy Sauce
Tempura Battered Aubergine
