Everyone loves pancakes right? And with Pancake Tuesday on the way we thought it appropriate to post a pancake recipe! And being Only Natural of course we couldn’t post a regular pancake recipe this one is Gluten Free and can be Dairy Free and Vegan too!
70g buckwheat flour
70g rice flour
1 tsp baking powder
1/2 tsp salt
1/2 tsp bread soda
1 tbsp coconut sugar
1 large egg (if vegan replace with No Egg or 1 tbsp of soaked Chia seeds)
1/2 cup natural yoghurt (coconut/soya if dairy free)
1/2 – 3/4 cup buttermilk (coconut/almond/soya milk if dairy free)
Coconut oil/butter for frying
1. Sieve all dry ingredients together in a bowl
2. Whisk wet ingredients together and add to flour mixture and mix to a smooth batter.
3. You can add some blueberries or raspberries at this point.
4. Fry on both sides in a little oil. The trick with these pancakes is to keep them small as larger pancakes are difficult to handle.
