This month our super easy Recipe of the Month has been provided by Rocky of D’lush Café. Based in Wexford Arts Centre D’lush has been offering a healthy and more wholesome offering for lunch since 2006 and can cater to most tastes and intolerances!
Date & Ginger Cake
165g of fair trade brown sugar
165g of butter
Thumb size piece of ginger grated
2 free range eggs
200g pitted organic dates soaked in water
200g self raising gluten free & wheat free flour
1 pink lady apple
Melt butter & sugar with ginger
Whisk in 2 eggs
Add self raising gluten free & wheat free flour, chopped dates & apple.
Put in a loaf bin and bake for 40mins at 160 degrees.
