Mother’s Day (or anytime!) Treat
This month’s recipe comes again courtesy of Chloé, one of our nutritional therapists in Only Natural and we thought these chocolate chip cookies were so scrummy and yet so simple to make that they’d make the perfect treat for very junior bakers to put together, under some supervision, for Mum on her special day. They’re gluten free, added sugar free, vegan and paleo friendly, can be made in under 20 minutes and taste decadent. Give them a try!
1 1/2 cups cashew nut butter
1/4 cup maple syrup
1 tsp vanilla extract or vanilla powder
1/4 tsp sea salt
1/4 cup dark chocolate chips
Preheat oven to 180 degrees
Combine all ingredients except the chocolate chips in a food processor and pulse to combine them.
Fold in the chocolate chips.
Drop them onto a lined baking sheet (you should get 10 cookies) and bake for 10 minutes.
Allow to cool completely before removing from the sheet.
Store in an airtight container for up to 2 weeks or freeze for longer.
